Instructions

- Cook the Rice: In a medium saucepan, add jasmine rice (300g) and chicken stock (500ml). Bring to a boil over medium heat (approximately 5 minutes). Once boiling, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for 10 minutes.
- Prepare the Chicken: Heat the large non-stick skillet over medium-high heat. Add sesame oil (30ml) and allow it to heat for 1 minute. Add the marinated chicken thighs and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let it rest for 5 minutes.
- Make the Coconut Sauce: In the same skillet, lower the heat to medium and add coconut milk (400ml) and sliced red chili (10g). Stir for 2-3 minutes until the mixture is well combined and heated through. Adjust seasoning with salt if needed.
